Plain partitions are hard to resize, so a full /data often means downtime and copying files around. LVM adds a flexible layer that pools disks and lets you grow a volume while it is in use. Use it on VMs and bare-metal servers where volumes will grow over time. On cloud block storage you can often just resize the disk itself, and remember that growing the volume is not the same as growing the file system on it.
