Text data is rarely in the exact shape you need: names need joining, emails need trimming, codes need cutting out. String functions like UPPER, LENGTH, SUBSTR and concatenation reshape text inside the query. Use them for cleaning and formatting output. Function names differ between databases, for example MySQL uses CONCAT because || means OR there by default.
