You need a system that collects numbers like request counts and latency from every service and lets you query them. Prometheus does this by scraping a /metrics endpoint on each target and storing the values as time series you can query with PromQL. Use it for service health, dashboards and alert rules, such as the per-second rate of 5xx responses. It is not meant for storing individual events with full detail; those belong in logs.
