Servers have to live somewhere, and the place decides latency for users, which laws apply to the data, and what survives a power cut. Pick a Region close to your users, then spread copies across two or more Availability Zones so one data centre failing does not take you down. An edge location is not where you run servers; it only serves cached content and DNS. Expect "Region vs AZ" as a warm-up question.
